New Recipe: Chard and Leek soup with Cilantro
Every week I get a box of veggies from Farm Fresh To You; each time they include a recipe that incoperates items that were sent, and this week I figuerd “Why not, might as well try something new. I read over the recipe, and it looked solid but I made some adjustments. The results were veddy nice!

Chard and Leek soup with Cilantro
Prep time: 30 mins
Cook time: 25 mins
Serves 4 people
Ingredients:
- 4 tablespoons salted butter
- 3 Medium sized new (red) potatoes, peeled and diced
- 2 Leeks, chopped and washed
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 cup dry white wine
- 3 cups vegetable broth or chicken broth (low sodium)
- 3 1/2 cups filtered water
- 1 bunch chard, chopped
- 1 bunch cilantro leaves separated from stems
- 2 cups crème fresh
- 2 cups steamed white rice
- Salt and pepper to taste
Instructions:
- Start by melting the butter in a large soup pot. Add potatoes and leeks and boost the heat to med-high, add salt and paprika to the veggies and stir together. Stir periodically until softened, about 8 - 10 minutes.
- Once some browning begins on potatoes, deglaze pot with white wine. Stir for about a minute to get everything off the bottom of the pot.
- Add broth and water and bring to a boil.
- Reduce heat to a simmer and add chard. Cook for 15 mins.
- Add cilantro and puree mixture with a hand blender. Taste soup and add salt and pepper as needed.
- Pour soup into individual bowls and swirl in crème fresh. Add rice to center and serve.
